I've had a coconut sponge cake made for a friend's birthday but I got the wrong day, it's not until next week. What's the best way to keep it fresh until then? Can It be frozen? Or should I just keep it refrigerated? The cake itself has a very fluffy moist sponge and tastes amazing. I don't want it to lose it's soft texture or amazing taste. Will it turn soggy if frozen?
It is iced in mascarpone cream cheese (I think) and then covered in shredded fresh young coconut flesh.
